VINIFICATION After partial destemming, the grapes were foot-trodden in traditional granite lagares, with 3–5 days of pre-fermentation cold maceration, followed by spontaneous fermentation in lagar at a controlled temperature of 26 °C. The fermentation was completed in stainless steel vats, with strict oxygen management in the cellar to avoid the use of sulfites.
AGEING 14 months in new and used French oak barrels, followed by over 3 years of bottle ageing.
